Recently, my grandmother and I were talking about our favorite eats, and I brought up a sandwich that we sometimes have at my university’s cafeteria - the farmer’s market sandwich. It’s healthy, refreshing, and perfect for the warmer summer weather that has appeared over the last few days. Here’s the breakdown (a.k.a. what you’ll need to make the sandwiches):
½-can of quartered artichoke hearts
1 red pepper
¼-cup of feta cheese
1-2 tablespoons of Italian dressing
Italian bread or multi-grain rolls
Begin by cutting up the red pepper into slices and roasting them until they’re soft and slightly shriveled. Let cool and then cut into small pieces. Cute the artichoke hearts into small pieces. Mix the peppers, artichoke hearts, and feta cheese with the Italian dressing. Pile fresh spinach onto the bread or roll, and then generously heap artichoke-pepper filling onto the spinach.
The artichoke-pepper filling would also work well with crackers as appetizers.
